Laval aspiring chef Yasmine Saidero took part in a culinary competition held at the Institut de tourisme et d’hôtellerie du Québec (ITHQ) from November 2 to 5 as part of Le porc du Québec week.
Saidero was among 15 students from the ITHQ’s Cuisine supérieure program invited to participate in the event, organized by Le Porc Show in collaboration with Les Éleveurs de porcs du Québec.
Three dishes prepared for the competition
Saidero competed alongside Léa Gousy-Charbonneau.
Working in teams of two, the students were asked to prepare three gastronomic dishes featuring pork cheek, spare ribs and flank steak.
According to organizers, the week also included a pork-cutting demonstration by Julie Castonguay of Olymel and a presentation on Quebec’s pork sector by Louis-Philippe Roy, president of Les Éleveurs de porcs du Québec.
The culinary competition itself took place on November 5, when eight teams presented their dishes to a jury.
The three finalist teams were expected to share $3,000 in scholarships, while the winning dish was scheduled to be served as an appetizer during the Porc Show luncheon on December 9.
The result of the November 5 competition was not included in the information provided to Laval Weekly.
From Laval to the restaurant industry
According to the organizers, Saidero already works as a cook and pastry chef in the restaurant industry.
She has a particular interest in garde-manger work, including appetizers, cold dishes and desserts, and hopes eventually to open her own business combining elements of a café and a gastronomic restaurant.
“This competition is a privileged opportunity to introduce the next generation of culinary professionals to the quality and versatility of Quebec pork,” said Sophie Perreault, president of Le Porc Show and executive director of Les Éleveurs de porcs du Québec.
The Porc Show will take place in Quebec City on December 8 and 9 and will bring together producers, processors, suppliers and other representatives of Quebec’s pork industry.
